The wines are in the hands of Isabelle Tellier, who graduated as an oenologist from the University of Reims in 1992 and has been Tsarine's cellar master since 2001 — one of the first women chefs de cave in Champagne.
The backbone of the cuvées is a balanced blend of the three Champagne varieties — chardonnay, pinot noir and meunier — with a substantial share of reserve wines, part of them aged in oak. Ageing on lees is at least three years even for the house cuvées, and four to five for the vintages.
Details matter: the choice of crus, the proportion of reserve wines, the rest after disgorgement and a consistently restrained dosage together create the taut, precise style by which the house is recognised.
